Spicy Turkey Lettuce Wrap

I am a genius.  Okay not really. 

But! I came up with a meal all my own! (I lack creativity juice so this is a serious accomplishment)  How’s that for domestic?

So this meal is DELICIOUS.  And guess what?  It’s healthy!! And easy!  High fives all around! 

Before I begin, you must immediately find where they are selling this stuff and buy tons of it.  It.is.amazing. I’ve given up mayonnaise because this is all I need.  I put it on anything and everything and am not opposed to taking a giant spoon and shoveling it into my mouth.  It’s that good. For me, I found it at Costco after being tipped off to its amazingness by a good friend. 

I suppose one could make their own dip but let’s be honest, I am not that person.

Moving on…

For the meal, you will need:

One package Lean ground turkey

1/4 cup minced red onion

2 garlic cloves, minced or pressed

1 tsp cumin

1 T chili powder

1 tsp cordiander

1 T oregano

3 T sauce from a small can of chipotle chilis in adobo sauce

salt and pepper to taste

bunch of green leaf lettuce

sweet mini peppers (they also sell these at my Costco)

feta cheese

avocados

Jalapeño greek yogurt dip

Cut the sweet mini peppers into strips and drizzle with olive oil and lightly sprinkle with salt and pepper.  You could grill these or roast them in the oven.  I grill them for about 10 minutes on high, rotating often.  You could roast these in the oven on a baking sheet, at 375 degrees for 15-20 minutes.  You want them tender and lightly charred.  (My husband is mildly obsessed with these peppers, it’s one of his favorite foods.  So I usually grill a ton of them in the beginning of the week and use them for various meals.)

After your peppers are done, set them aside.

Mix together the first nine ingredients and form into patties.  I use my grill to cook them but of course you could use your stove.  Just sauté them in a skillet.  On the grill they cook quickly, just 5-6 minutes a side for small to medium patties. 

Wash the lettuce and tear off large pieces for plating.  Spread the yogurt dip on each side of lettuce like you would a hamburger bun.  Place the turkey patty in the center and top with avocado, grilled peppers and sprinkle with feta cheese.  Wrap it up and enjoy!  You could serve this with a side of sweet potato fries and it would be an awesome summer meal.

That sounds really yummy (minus the turkey for me though!) I have been making sandwiches and wraps with the spicy hummus from Costco, and that is also super good. I'll have to try the jalepeno dip next.

Also, my kids requested cereal for dinner last night and I thought of you :)

We almost got that dip from Costco; instead we opted for some spinach artichoke stuff that's pure crap. Next time, we'll know better.

This dish looks delish. I'll have to make it and see if Ryan can get past the ground turkey.

I made these last night and they were AWESOME. Everyone loved them, even Mr. I-don't-like-ground-turkey. He said the recipe was definitely a keeper. And even Luke exclaimed over how good they were (granted he ate his sans lettuce, but still.) And, even better, they are p90x friendly! Nice job.
